Main Purpose of Job
POSITION DUTIES
Direct the school food service program in conformance with federal and state laws and regulations, local and state health ordinances, and school policies: lunch for elementary, middle, high school; pre-school and elementary snacks in compliance with HHFKA (Healthy, Hunger-Free Kids Act of 2010); breakfast and dinner for residential students which are nutritious and appetizing; and special catered functions for special events and weekend tournaments.
Meet special dietary needs as specified in medical documentation.
Work with Registered Dietitian, if necessary.
Develop and implement standards for the operation of an efficient, sanitary, and high quality food service department.
Maintain the department's HAACP plan & food safety manual.
Complete requisitions of all foods, paper supplies, dietary chemical and cleaning supplies, equipment supplies, office supplies, dining room supplies, and equipment.
Work with school procurement officer to maintain compliance with Maryland State Procurement Laws.
Develop and test menus and recipes, plan menus that provide nutritional and appetizing foods, and maintain cost control.
Extend recipes and accurately determine food requirements.
Maintain necessary records.
Knowledge of: Federal and state regulations governing child nutrition programs; principles of good nutrition and their application to school food service and the nutritional well being of students; food sanitation principles and control of microbiological and physical contamination of food; quality of food preparation, service, storage, delivery, sanitation and safety; principles of work scheduling; menu planning to meet nutritional needs and taste preferences to students and to control plate waste; and food portion control.
Responsible for maintaining current staff positions, selecting, orienting, and training of dietary personnel; scheduling; and time recordkeeping. Includes training for food safety and safe practices in the kitchen.
Develop specifications for the equipment (existing) and research specifications of the equipment needing to be purchased.
Maintain knowledge of developments in food service management and nutrition education.
Provide liaison between education and food service staff in establishing and conducting nutrition education programs.
MINIMUM QUALIFICATIONS
Education: A bachelor’s degree from an accredited college or university.
Experience: One year (I), two years (II), four years (III), and five years (IV) of experience managing large-scale food service operations in an institutional, commercial, industrial or similar organization.
Notes:
1. Additional experience supervising in a large-scale food service operation may be substituted on a year-for-year basis for up to four years of the required education.
2. Candidates may substitute U.S. Armed Forces military service experience as a commissioned officer in Food Services Officers classifications or Food Services Manager and Services Officer specialty codes in the food service management field of work on a year-for-year basis for the required experience and education.
